Pecorino is really ancient in origin.

It is the classic mature sheep's milk cheese, with a compact, slightly straw-coloured texture and an intense taste.
It is matured for a minimum of 8 months, to allow the cheese to acquire its characteristic taste.
It can be eaten at the table or grated to decorate starters.
